Vegetables and their commercial by-products are made up of substances belonging to different categories: - carbohydrates, proteins, fats, mineral salts and fibers. The "fiber" is the non-digestible part consisting of polymers (lignin, cellulose, hemicellulose, pectin). The importance to determine the fiber content is due to nutritional reason (its quantity must be carefully controlled since a high intake could cause problems of indigestibility, whereas a low intake could cause irregularities in the functioning of the digestive tract); economic reason (fiber as a raw material is a low-cost food product component for food companies);legislative reason (the authorities of almost all countries require manufacturers of packaged foods and animal feeds to declare the fiber content on the packaging as part of the nutritional table).
