Vegetables and derived products are made up of substances belonging to different categories: - carbohydrates, proteins, fats, mineral salts; - a non-digestible component consisting of polymers (lignin, cellulose, hemicellulose, pectin) called “fiber”. There are many reasons why it is very important to determine the fiber content:
NUTRITIONAL REASON The quantity of fiber in the diet of human beings and animals is important in order to maintain the digestive system healthy and functional; too much fiber can cause digestive problems whereas a low fiber intake can cause irregularities in the functioning of the digestive tract.
ECONOMIC REASON Manufacturers of food and animal feeds use as much fiber as a raw material as they are allowed since it is a low-cost component.
LEGAL REASON The authorities of almost all countries require manufacturers of packaged foods and animal feeds to declare the fiber content on the packaging as part of the nutritional table.
