For a wide range of companies, the prediction of oxidation stability of raw material and finished products is a matter of ever-growing importance with many operational and economic implications. 

Studying the behavior of fats oxidation is critical for quality control and R&D operators and provides important information for comparing formulas and new ingredients, studying the transportation effects on goods, assessing the storage period, developing new products, and more.

VELP provides an innovative accelerated Oxidation Stability Reactor that enables companies to achieve accurate and reliable results, according to AOCS Cd-12c-16.

The VELP Oxitest performs analysis without requiring a preliminary fat extraction and this guarantees representative results. In fact, the components of a complex matrix not extracted with an organic solvent, are often important in determining the oxidative stability of the fat component. Then they must be considered by letting them act in their matrix.

By submitting the sample to an established over-pressure of pure oxygen (6 bar, degree 5.0) and high constant temperature (90 °C), the instrument measures the absolute pressure change inside two independent chambers, monitoring the oxygen uptake by reactive components present in samples, and gives as result the Induction Period (IP).

The IP is the time required to reach the starting point of oxidation, corresponding to either a level of detectable rancidity or a sudden change in the rate of oxidation. The longer the Induction Period, the higher the stability against oxidation over time.

The OXITEST is controlled by the OXISoftTM software, which shows program parameters, run conditions, and results.  It comes with pre-installed methods and manages all the steps of the analysis, enabling different types of tests on goods:

1. REPEATABILITY TEST
A series of tests run on the same sample or standard, to verify the IP value and calculate the accuracy and repeatability of data.
The Average IP of repeatability tests will become the reference measure of quality.

2. FRESHNESS TEST
It enables checking the quality of different lots and comparing them to assess that the quality is the same.

3. FORMULA COMPARISON
It enables testing different formulas under the same conditions, to identify the most stable one. This test is very useful for product development, formula optimization, testing goods from a new unknown supplier, and testing alternative ingredients.

4. PACKAGING COMPARISON
Packaging plays a crucial role in product shelf-life. A good design can influence the buyer's decision, but more important is how the product is «protected».
The OXITEST enables the comparison of the same sample, contained in different packaging, to identify the one which maintains the product in the freshest condition. The product with the longer IP is the one with the best packaging. 

5. IP DURING AGEING
This test gives the possibility to monitor product oxidation at defined time intervals and analyze the decrease of the product IP during the shelf-life period. It is useful to study how packaging affects oxidation stability over time, for goods purchasing planning and stock level study based on oxidation stability results.

6. ESTIMATED SHELF-LIFE
This test offers the possibility to have a prediction of oxidation stability during the shelf-life. The same product is tested at different temperatures. In the case of a linear equation, the operator can extrapolate and estimate the oxidation stability of the sample even at room temperature.
